Ingredients

  • teff grain 1/3 cup
  • unsweetened soy milk 1 1/4 cups
  • ground flaxseed 1 tablespoon
  • chia seeds 1 tablespoon
  • chopped almonds or walnuts 2 tablespoons
  • fresh or frozen blueberries or strawberries 1/2 cup
  • cinnamon 1/2 teaspoon
  • vanilla extract 1/2 teaspoon
  • pinch sea salt

Instructions

  • In a small saucepan, whisk teff, soy milk, and salt until combined. Bring to a gentle simmer over medium heat.
  • Reduce heat to low and cook for 12–15 minutes, stirring frequently, until thick and creamy.
  • Remove from heat and stir in flaxseed, chia seeds, nuts, cinnamon, vanilla, and berries. Let stand 2 minutes before serving.

Notes

Refrigerate leftovers up to 2 days and reheat gently with additional milk or water.
