These soft, naturally sweet energy bites use aronia powder, blueberries, coconut, oats, and almond butter for a brain-supportive snack rich in antioxidants, fiber, and healthy fats without walnuts or cacao.

Ingredients

  • 1 cup old-fashioned rolled oats 1 cup
  • 1/3 cup natural almond butter 1/3 cup
  • 3 tbsp aronia powder 2 tablespoons
  • 1/4 cup unsweetened shredded coconut 1/4 cup
  • 1 tbsp chia seeds 1 tablespoon
  • 2 tbsps hemp hearts 2 tablespoons
  • 1 tsp cinnamon 1 teaspoon
  • 1 tsp vanilla extract 1 teaspoon
  • 2 tbsp honey 2 tablespoons
  • 1/8 tsp sea salt 1/8 teaspoon

Instructions

  • Add the oats, aronia powder, shredded coconut, chia seeds, hemp hearts, cinnamon, and sea salt to a food processor. Pulse until combined.
  • Add the almond butter, honey, and vanilla extract. Process until the mixture becomes sticky and holds together when pressed.
  • Scoop and roll the mixture into 10 equal-sized balls.
  • Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store refrigerated in an airtight container for up to 1 week.
  • If the mixture feels too dry, add 1–2 teaspoons of almond milk.
  • Freeze-dried blueberries can be added for texture. 
  • For additional protein, mix in 2 tablespoons of vanilla protein powder.
