Ingredients

  • rolled oats 3 cups
  • chopped walnuts 1/2 cup
  • pumpkin seeds 1/3 cup
  • ground flaxseed 1/4 cup
  • tahini 1/4 cup
  • extra-virgin olive oil 2 tablespoons
  • maple syrup or honey 2 tablespoons
  • ground turmeric 1/2 teaspoon
  • cinnamon 1 teaspoon
  • ground ginger 1/2 teaspoon
  • vanilla extract 1 teaspoon
  • sea salt 1/4 teaspoon

Instructions

  • Preheat oven to 325°F (165°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine oats, walnuts, pumpkin seeds, flaxseed, turmeric, cinnamon, ginger, and salt. Stir in tahini, olive oil, maple syrup, and vanilla until evenly coated.
  • Spread mixture evenly on the baking sheet and bake for 22–25 minutes, stirring once halfway, until golden and fragrant. Cool completely before breaking into clusters.

Notes

Store in an airtight container at room temperature for up to 2 weeks or refrigerate for longer freshness.
